Curiosa

Wassmann

The Wassmann couple have no employees and do all the work in the vineyards, in the cellar and marketing by themselves to achieve the best quality. Their cellars are traditional, built in clay by the danubian Swabians more than 100 years ago. There is no concrete, no technique there, the soil in the cellars is pure, natural clay ground.

Production

After the hand-picking on September 9th, 21st, 27th with 98 and 99° Öchsle, the mash fermented spontaneously. The malolactic fermentation also took place spontaneously. The wine matured in used Hungarian and French small oak barrels for 18 months in our traditional earth cellar. The wine was bottled unfined and unfiltered and got minimal sulfur. Vegan.

Character

Nuanced and fruity, well balanced with smooth tannins and fresh acidity.

Aroma and taste

Clear, firm and yet polished, rather cool fragrance of dark berries and a little cherry with a very moderate, slightly roasted wood spice, nutty and mushroom aromas and earthy minerality. Herb-juicy, quite fresh, again rather cool fruit, some acid bite and fine sandy tannin, dried vegetable and peppery nuances, chalky-salty minerality, good substance and certain depth, very good, tight, tangy-juicy finish with notes of dried herbs as well as nutty and spicy wood notes.
